A jewel of gastronomy, folklore and, near and far, Nivelles culture, the Brotherhood of the Târte al djote (don’t forget the circumflex!), created on 21 September 1980 and composed of a maximum of 55 members grouped around the 'Grand Bailly', has the aim of preserving and promoting the age-old recipe for the celebrated tarte aclote. Considered one of the institutions of Nivelles gastronomy, the târte al djote can boast of having a long historic past, as it already appears in texts from 1218, although it is probably much older. Served hot and prepared using bètchéye, a fermented cheese based on low-fat cow’s milk, butter, parsley, chopped onions and djote, the name given in Nivelles to the green vegetable commonly known as chard, this tart is the subject of a very official and public award of quality labels each year. |
