The 'tarte au Crastofé' of Ittre PDF Print
The famous tarte au Crastofé, a gastronomic speciality of Ittre, was originally created to mark the renovation of the chapel of Notre-dame de la Consolation; some people had the idea of reviving it on the basis of amalgamation of several variants of old recipes found here and there…
But you would have to be clever indeed to know the recipe! In fact, aside from saying that it is a tart with full-fat cheese, substantial, going back to old traditions, and a 'little cousin' of the târte al djote of Nivelles, but without chard, no one to date has been able to penetrate the secrets of making it, jealously guarded by a handful of 'initiates'.

The very delicious tarte au Crastofé is however only available during large festivities organised in Ittre, and is eaten accompanied by a good 'Crastofète' beer brewed in Ecaussinnes.
