A truffle with pure butter, coated in melted chocolate and rolled in crystallised sugar, the 'Gayette' is now a tempting praline for many people, but for some, it still evokes a more palpable warmth, an integral part of their life... This pretty and appetising little truffle, deliciously crunchy and irresistible, with a soft melting centre, is nonetheless a reminder of the history of the region, as its somewhat irregular shape scattered with sparkling crystallised sugar and its anthracite grey colour are strangely reminiscent of the small pieces of coal that used to be given to miners for heating.
